Shilling Collins

The name here relates back to New England and the respect for the aptly nicknamed pine tree shilling, otherwise known as the cranberry. The cranberry was traded like wealth and looked upon like currency in the 1600’s and was often only eaten at Christmas with dinner as cranberry jelly was a preserve saved for special occasions.

  • Seasonal Berries or Dehydrated Citrus Slice
  • Fresh Mint
METHOD

Add gin, cranberry jelly and bitters to a shaker tin / jam jar, pack with cubed Ice, shake quickly for around 5 seconds and strain into a chilled highball glass. Top with East Imperial Yuzu Lemonade and pack with cubed ice. Garnish with a large sprig of mint from the garden and seasonal berries or dehydrated citrus slice.
